Hands down DELICIOUS.

I’ve made these twice now, the first time using a 13×9 pan where I doubled the recipe – and i ended up making an 8×8 crust for the extra filling and topping.

The next time was for a large Easter crowd and I made TWO 13×9 pans – doubling the crust for each and then using a triple batch of filling and topping to do both pans. Turned out INCREDIBLE.

I have received GREAT reviews – very fresh, lemony, and deliciously tart.

You can fake it by using boxed cake mix to make the process easier/faster and I want to try more flavor combos…speaking of…housewarming coming soon?

When I first heard the name Irish Carbomb Cupcakes, I thought “nah, it must be a coincidence!”

But then I see this, and I read it, and it’s TRUE! You’ve turned the best beverage into a dessert!!!

I wish I’d have been at that CCHH – I would’ve had quite a few irish carbombs and irish carcakes. This is fantastic.
